This beef and green beans recipe is a really hearty, tasty and satisfying family meal, made in a slow cooker (crock pot) or a casserole in the oven
You will need:
400g diced beef
1 stock cube
200g fresh green beans (frozen green beans can be used, but omit the blanching stage)
a handful of pearl barley
But of course you can adapt this to suit yourself
Try adding extra root vegetables such as onions carrots or celeriac to make your meal go further
You can also of course add your favourite herbs, spices, garlic etc or even a spoon of curry powder to spice it up a bit
(but if you don't have a slow cooker or crock pot, you can cook this in a casserole in the oven)
First top and tail the green beans
The beans will then need to be blanched
Bring some water to the boil and throw in the beans. Boil them for a couple of minutes (parboil)
This is necessary otherwise your beans might not cook properly in the slow cooker. If you are using a casserole in the oven then you probably won't need to do this
Next add the barley to the crock pot with the crumbled stock cube (or your choice of seasoning) and add about 150ml cold water
Then add your beef and green beans, placing the green beans first to ensure they don't dry up at the surface
Have your slow cooker set to a low temperature. and put the lid in place
You can leave it stewing all day and it will be lovely and tender for your evening meal
This is really nice served with rice or mash, but especially with mash
I ate mine with a homemade flatbread
