Cheesy aubergine (eggplant)couldn't be easier to make
Just slice an aubergine length ways (or cut into slices)
.... and drizzle with a little olive oil
Part bake until starting to brown in a medium oven (about 200oC/gas 6)
Sprinkle with grated cheese and pop back into the oven....
... until the cheese is melted and bubbling
Very simple - but also quite versatile as you can eat them as a starter, or as a side dish, or with rice and vegetables (or similar) as a vegetarian meal
...... or with the right choice of dairy free cheese (one that melts well) as a vegan alternative
You can make this vegetable dish a little more special with the addition of cooked finely chopped vegetables mixed with the cheese
or sprinkle with breadcrumbs, crushed crisps (potato chips) herbs and spices
