With some odds and ends of vegetables to use up, I thought it a good opportunity to make a pan of delicious veggie soup.
I also had a pack of minced chicken waiting to be made into burgers, so it seemed like a good opportunity to go for a chicken and vegetable soup. So I pilfered some of the chicken mince to go into the soup - and very nice it was too, with still plenty left for burgers.
This would work well for leftover cooked chicken too

Silly me thought my brain was better than it is. I wrote down the ingredients I used but thought I would remember the quantities.
But, you know what, if I can make a soup with no recipe - then so can anyone
Use your common sense and your tastebuds.
I literally just cut up some carrots, onions and mushrooms, put them in a saucepan, covered them with water, then added herbs, spices, a tablespoon of pearl barley (yes, I wrote that one down!) and threw in some chicken mince and a vegetable. stock cube
Just try it with whatever you've got in your veggie drawer
