Lamb Stew

This is so easy to make in a crockpot or slow cooker

ingredients are approximate, so just use what you have or what is convenient


For 2 to 4 people, depending how hungry you are:

1 or 2 onions

200g carrots

600g potatoes

1 or 2 cloves of garlic

1 stock cube

herbs/spices/black pepper to your taste

1 small handful of pearl barley

150 grams of diced lamb

You can brown the meat off first if you like - but it's fine to put it straight into the crock pot.

However it's a good idea to part cook the onions because they don't always cook properly in a crock pot

Either fry them in a little oil, or if you want to keep the calories down, just use a splash of water in a non-stick pan

Dice the potatoes

Chop the carrots and the garlic

Throw the onions, carrots, garlic and potatoes into the crockpot

Add whatever extra seasoning you fancy

Dissolve the stock cube in 500ml of boiling water and pour this over all the ingredients.

Give everything a bit of a stir to mix it all together and add a small handful of barley

Put the lid in place and either cook on low if you're leaving it all day, or on high if you have less time.

Do a taste test to check if you need extra salt/seasoning
