Minced beef curry

Minced beef curry is a nice tasty everyday curry for all the family (well all who like a bit of mild heat)

This should make around 2 portions, or 3 if served with plenty of rice

For your minced beef curry you will need:

1 medium chilli

1 lime

1 small chunk of ginger

2 garlic cloves

250g minced (ground) beef

150g grated carrot

1 celery stick sliced thinly

1 beef or vegetable stock cube

1/2 tin of tomatoes

1/4 tsp turmeric

1tsp mixed herbs

2tsp mild curry powder

1/2 carton of coconut cream

How to make your minced beef curry

Finely chop the chilli, the ginger and the garlic cloves

Finely grate the green part of the lime rind

Heat all these for a few  minutes in a splash of water over a medium heat. top up the water as necessary

Add 250g minced (ground) beef - or any other minced meat and stir for another few minutes to brown it.


then add:

150 grated carrot

1 thin sliced celery stick

1 stock cube

1/2 tin toms

1/4 tsp turmeric

1 tsp herbs

2 tsp mild curry powder


Keep stirring until everything is cooked adding splashes of water as needed

Stir in 1/2 carton coconut cream (100ml)

Add the juice of the lime just before serving and stir it in thoroughly.


Best served with rice of course, but it tastes fantastic with mashed potatoes, roast potatoes or chips (french fries)
