Oil free stir fry - it CAN be done
Although technically speaking it's not really frying at all if the food isn't cooked in fat or oil, but it's much the same method, which is to cut the food up small or into strips so that it cooks more quickly, and stir it around a hot pan or wok to be sure it cooks evenly.
Instead of oil or fat, all you need to add to the pan is a splash of water, but unlike frying with oil, you have to keep topping it up, so have a wee jug of water next to the stove at the ready.
Be sure to not add too much water or it will be more like boiled veg rather than fried
Choose vegetables that cook fairly quickly or that will still be crunchy and tasty if not completely cooked
Don't forget your favourite seasoning and/or you can also finish by adding a suitable sauce such as sweet and sour.
Of course you can also add meat, but be sure it is safely cooked right through before serving
Here's mine served up with delicious hot falafel
