Pasta With Beef

Pasta with beef - a wonderful tasty filling meal to eat hot or cold

Suggested Ingredients for pasta with beef

2 onions

1 clove of garlic

500g minced (ground) beef

500g dried pasta

200g other diced/sliced mixed veg of your choice. Peas, sweetcorn, carrots are a good choice - but whatever you have.  The pasta in the photo has broccoli stalks, carrots, peas and celery

1 litre of meat or vegetable stock (us a stock cube or stock/bouillon powder if you wish)

salt and pepper

Your favourite herbs and spices

How to make your beef with pasta

Bring the stock to the boil in a large saucepan

Chop the onion and garlic and fry for 2 minutes in a small amount of oil in a separate frying pan.  If you want to use less oil, add a splash of water too.

Add the pasta to the boiling water. Turn down the heat, put on a lid and simmer until the pasta is almost cooked

Meanwhile, add the beef to the frying pan with the seasoning and stir fry for a few minutes to brown it

Keep your eye on that pasta - the water will get low, so keep giving it a stir to prevent it sticking.

Mix the meat mixture to the pasta and veg (there should still be a little water in there) and stir over a low heat for a few more minutes.  Don't let it get too dry

Any left over pasta mix can be eaten cold for lunch

If you're eating it cold, you can add salad vegetables too once it has cooled down
